Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 5 eggs
  • 2 tsp. cinnamon
  • 1 tbsp. maple syrup
  • *Canola cooking oil spray

Instructions

Step 1

Place all ingredients into a blender or food processor and blend together until smooth.

Step 2

Spray non-stick cooking spray onto a heated fry pan or griddle.. Pour about ΒΌ cup of batter per pancake, and repeat until the pan is filled.

Step 3

Cook until you start to see bubbles form on the surface of the pancakes, about 1-2 minutes. Then, flip and cook for another minute or until golden brown on both sides.

Step 4

Repeat this process until all the batter has been used. Top the pancakes with your favorite toppings (see serving suggestions below).
